A Deeply Rooted Greeley Tradition - "Where Friends Meet"

What started in 1972 as a tiny pizza restaurant with eight tables, has evolved into a deeply rooted family-run pub and grill in Greeley. Approaching its 50th year in business, Cables Pub & Grill pays particular attention to upholding the recipes that were handed down, as well as providing a welcoming atmosphere. 

Cables Pub & Grill Owner, Nikki Ellis, explains that the restaurant’s recipes originated decades ago and are still used today. “No matter how long it’s been, someone can come back and get their Cables fix and have their favorite pizza or pasta,” said Ellis. She further explained that customers happily share that it tastes just like they remembered. Cables prides itself on making many items from scratch, including homemade noodles, sauce, lasagna, meatballs, sausage, pizza dough and hand pressed burgers. 

The recipes and culture of Cables are ingrained in Ellis. She grew up in the family restaurant and spent a lot of time with her dad Keith Johnson, who purchased the restaurant in 1979. She started working at Cables as a hostess when she was a teenager and worked her way up, learning every position along the way, which inspired Ellis to pursue a degree in Restaurant and Resort Management from Colorado State University.

In 2006, Cables moved to their third location at the corner of 59th Ave. and 20th St. Johnson spearheaded the move with a vision for an updated concept and a large bar. Ellis’s mother, Debbie Johnson picked out the fabric for the booths, painted the walls and ceilings, and selected the ceiling tiles and wainscoting. “My Mom gets the credit for the interior design, down to every detail,” shared Ellis. 

Ellis and her husband Shawn purchased the family restaurant after her dad passed away in 2016. “I always knew I would take over the family business, I just didn’t think it would happen in this way,” Ellis explained with some sadness. Ellis described her dad as a smart businessman who built strong relationships. Referring to his friendly nature, Ellis said, “He never knew a stranger.”

Cables remains dedicated to the values of Ellis’s dad, treating everyone like family. Referencing the sitcom, “Cheers,” Ellis jokes that Cables is a place where people know your name. Ellis appreciates being part of a small community that supports one another. “As much as Greeley has grown, it still has a small-town feel. There’s not one day that I won’t run into someone I know,” said Ellis. 

Cables fresh cooking and friendly atmosphere are woven into significant moments in people’s lives. From first dates, to finding a future spouse, or making memories with college friends, Cables is deeply rooted in the community. Spend time at Cables Pub & Grill and you will experience the restaurant’s slogan, “Where Friends Meet,” and sense that you are part of something special.
