The Miyabi Koh 8” chef’s knife is Chef Sosa's go-to for all things on the line: breaking down a tenderloin, filleting fish, chopping herbs and more. “The Miyabi Koh is the Ferrari of knives to me. It has seen me through all of my days as a chef and will continue to be my faithful companion. When I was a young chef right out of culinary school, back in the early 2000s, I saved all of my money to finally be able to buy myself my first professional knife. As soon as I had enough, I rushed to the store. It was actually the man working at the store who suggested the Myabi. To this day, I’m so grateful that he did. I needed a tool that could be a jack-of-all-trades; durable and versatile for all things on the line, from breaking down fish to chopping herbs. It has since been my “go-to” knife. It is perfect for all things and never fails to perform,” says Chef Sosa. 

Giancarlo Laredo-Ruiz, Chef de Cuisine

Chef Giancarlo uses a Japanese-style knife with a good, solid blade. He emphasizes the importance of taking care of your knife and sharpening it frequently. He has his sharpened at least once a week. Born in Peru, he moved to Florence, Italy when he was just 11 years old. He spent his adolescence watching and learning from his mother in the kitchen, which ignited his passion for cooking. After culinary school, Laredo-Ruiz worked in the kitchens of various restaurants throughout Florence and gained experience in making fresh pasta, breads, and seafood and the importance of utilizing local, seasonal ingredients.

Michel's favorite knives are the set of four steak knives that he gives to the members of Arnette's Chop Shop Club. The presentation is beautiful. Each knife pouch is equipped with four special rosewood and stainless-handled knives with full serrated blades and each handle is engraved with your choice of name. These member knife pouches are displayed at the main entrance of Arnette's on a spectacular knife library wall. Members check in for their reservation and the Chop Shop team will collect the knives, as they become part of the members' table side dining experience.
