Cozy Crockpot Lasagna Soup

Fall in a bowl—all the comforting flavors of classic lasagna with the ease of a slow cooker

The cooler fall weather is here, which means it’s soup season. Coming home on a cool evening and enjoying a warm bowl of soup hits the spot. This Crockpot Lasagna Soup recipe is one of our favorite go-tos, especially when we're wanting Italian but don't have the time to put together lasagna.

This recipe has all the rich and delicious layers of a traditional lasagna dish without the hassle of layering, making it a low-stress meal for busy fall days. Preparation doesn't take long, and it's a fun recipe to get young kiddos involved with, as they love snapping the noodles into pieces and helping dump ingredients into the crockpot. Set your crockpot and let it do the work while your home fills with an incredible cozy aroma. By dinner time, you have a warm, crowd-pleasing meal ready to serve!

Ingredients:

  • 1 lb ground beef
  • 1 medium yellow onion, diced
  • 4 cloves of minced garlic
  • 24 oz marinara sauce
  • 32 oz beef broth
  • 1 tsp Italian seasoning
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • 1 tsp dried oregano
  • 1 tsp paprika
  • ½  tsp salt
  • ½  tsp pepper
  • 1 cup heavy cream
  • 1 cup mozzarella cheese 
  • ½ cup freshly grated Parmesan cheese
  • 10-12 lasagna sheets, broken into bite-size pieces (about 1-inch to 2-inch pieces)
  • Fresh basil leaves

Directions: 

  1. In a skillet over medium-high heat, cook and crumble ground beef. Drain any excess grease.
  2. In a crockpot, add the cooked beef, diced onion, minced garlic, marinara sauce, beef broth, Italian seasoning, basil, parsley, oregano, salt, pepper, paprika. Stir well, cover and cook on high for 3 hours (low for 5-6 hours).
  3. Give it a good stir and then mix in heavy cream, mozzarella cheese and Parmesan cheese. 
  4. Add in broken lasagna noodles, making sure they are fully submerged in the liquid.
  5. Cover and cook on high for another 30-45 minutes, or until noodles are cooked to your liking. 
  6. Serve hot and top with cheese and fresh basil. 

Tips:

  • Break lasagna noodles into small pieces before putting them in the crockpot. Smaller pieces are easier to fit on a spoon, making the soup easier to eat without needing to cut large noodles in your bowl. 
  • To add some extra protein, mix in cottage cheese when you are adding heavy whipping cream. 
  • If you want to add a little more spice, use ½ lb of ground beef and ½ lb of sausage.
