Autumn ushers in heartier cooking flavors and textures, including handheld tortillas bursting with delightful fillings. One Frisco culinary crew creates a different taco of the month for which Mo Assi, master taco designer and owner of Crush Taco, eagerly gives them freedom to invent new combinations for guests.

"Our featured tacos are inspired by seasonality, popularity and team collaboration. Our ideas are based on dishes we grew up with, or ones we love eating," Mo explains.

Launched in 2016, Mo says through this taqueria he started "a brand" in Frisco with quality, made-from-scratch ingredients and superior dining service.

Building on initial categories, such as a broad-based Italian or even a specific one of a hot dog, Mo says they then explore what associated ingredients should be combined to give new offerings the "Crush Taco flair." He adds that they have guests who've become an informal fan club of each month's featured taco, basically serving as a tasting panel.

One of their first featured tacos was the Spicy Rooster, with buttermilk-fried chicken. Mo says one of the most popular featured tacos was Crawfish Jambalaya. For September, they presented a Cuban taco.

'We keep our guests guessing!" assures Mo.
