Crustless Asparagus Quiche

Quiche - the quintessential brunch dish. It’s so versatile, both in the ingredients and in the side dishes that pair well. Got a breakfast planned with family? Pair quiche with chicken sausage and berries. Got lunch with friends? Serve it with a side salad tossed in a bright vinaigrette.

This quiche is crustless and has egg whites in place of some of the eggs so it’s lower in calories, carbohydrates, and fat too. Feel free to swap the asparagus with other vegetables, such as broccoli, zucchini & summer squash, mushrooms, or bell peppers. 

Crustless Asparagus Quiche

Makes 6 servings

Ingredients:

2 cups asparagus, cut into bite-size pieces, + 1 spear cut in half (or two very thin spears) for garnish

1/2 cup onions, chopped

1 cup egg whites

4 whole large eggs

1/4 cup milk

1/2 cup grated Parmesan cheese + 1 Tbsp 

Pinch nutmeg

Pinch red bell pepper flakes (optional)

1/2 tsp salt

1/4 tsp ground black pepper


Directions:

1. Preheat oven to 375 F.

2. Spray a pie dish with cooking spray.

3. Bring a pot of water to a boil. Blanche asparagus for 3 minutes. Drain and transfer to pie dish. 

4. Add onions to pie dish too.

5. In a medium bowl or large glass measuring dish, whisk together egg whites, eggs, milk, 1 cup Parmesan, and spices.

6. Pour egg mixture over asparagus.

7. Sprinkle top with remaining 1 Tbsp of Parmesan

8. Bake for 25 minutes, then top with split asparagus spear to garnish, and bake 10 minutes more.

9. Cool for at least 10 minutes before serving.
