Opening a new restaurant is not for the faint of heart. It’s often fraught with challenges, triumphs, and unforgettable experiences. Recently, I had the pleasure of chatting with Brad Nordeen, one of the dynamic duo behind LoLo American Kitchen, Lolito Cantina, and Stillwater Proper, to discuss his adventure launching Stillwater’s beloved establishment and the incredible journey that followed.
The Path to Experiential Dining
Both seasoned restaurateurs, Brad and his business partner, Joe Ehlenz, first crossed paths while working at Phil’s Tara Hideaway in their twenties. In 2013, they stumbled upon a modest 1500-square-foot space and immediately envisioned transforming it into an upscale yet value-based dining experience. With the help of a skilled architect, they made the seemingly impossible possible.
Financing, however, was a challenging feat. A few years past the financial crash, banks were reluctant to support their venture. Brad recalls, “We went to multiple banks, and they wouldn’t even talk to us.” But perseverance paid off. Thanks to a chance connection through Brad’s mother, a small bank was willing to work with them but did require collateral. In a heartwarming display of support, Brad’s parents offered their cabin property, and his 90-year-old grandfather put up his home. “Our family believed in us and what we could bring to the community,” Brad shared.
The final piece of the financial puzzle fell into place through a mutual acquaintance willing to provide the remaining funds. This chance phone call turned into a cornerstone of their success.
Drawing inspiration from Brad’s time at 112 Eatery in Minneapolis, another small yet iconic restaurant well-known to locals, Brad and Joe crafted a space that promised an exceptional dining experience despite its size.
A Magical Growth Story
Their first venture, the Stillwater location, came together “almost magically,” Brad shared. And within just the first year, they received an unexpected opportunity to bid for a spot at the airport. “By luck, we were able to present our plan, and a week later, we were approved to open a spot at the end of Concourse E,” Brad recalled with a smile.
The success continued with the opening of their Hudson location in 2017 and the expansion of their Stillwater location with a lounge, prep kitchen, and office space.
Combining Great Food with an Even Greater Experience
I asked Brad how he and Joe decided on the atmosphere and menu they wanted to create. Thinking back on the landscape in Stillwater a decade ago, Brad noted, “There wasn’t really anywhere that brought great food and drinks together with a fun and exciting dining experience. We wanted a place where people could have a great time and enjoy fine dining quality without pretentiousness.” Brad emphasized, “We wanted a place that offered value and was welcoming to all comers."
At LoLo American Kitchen, the focus is on creating memorable experiences. “Our foundation is great food and drinks, but it’s the overall experience beyond those that leave a lasting impression. Patrons remember the atmosphere and how they felt,” Brad said.
Also, great talent is key. “We find the right people to work with us who are invested and bring the right attitudes. Integrity and how they treat others are non-negotiable.” Brad explained that while teaching the technical skills of cooking and bartending can be done, cultivating the experiential aspects is where the magic happens.
Continued Expansion in Stillwater
Brad and Joe's passion didn’t stop at LoLo American Kitchen. In 2019, they opened Lolito Cantina, a Latin American restaurant specializing in regional Southern Mexican cuisine with handmade tortillas, smoked meats, seafood, mezcal, and tequila. In 2021, they launched Stillwater Proper, an upscale bar and grill experience with classic Americana vibes where the smash burgers use beef ground in-house daily, and the cocktails are prepared with all the care and dedication of the most dedicated chef. The space also includes a microdistillery and tasting room from 45th Parallel Distillery.
As the end of our conversation neared, I asked Brad about his favorite part of the job, and his answer was heartfelt: “The daily interactions. Seeing people happy with their dining experience and employees taking pride in their work makes for a great day.” Brad and Joe’s dedication to their craft and community has created a place where joy and great food go hand in hand.
