Ingredients
Pancake mix
16 ounces vanilla frosting
1 tablespoon ground cinnamon
1 cup brown sugar
8 tablespoons butter, divided, plus more for cooking
1 pound ground breakfast sausage
Salt
Maple syrup
Fresh mint or edible flowers
Directions
1. Prepare pancake mix according to package instructions. Let rest for at least 10 minutes. Brown sausage in a skillet and set aside. Wash and de-stem mint/edible flowers.
2. In a microwave-safe bowl, combine 4 tablespoons of butter with icing. Microwave for 15 seconds and then stir. Repeat until icing is smooth and thin enough to drizzle.
3. In another microwave-safe bowl, mix remaining butter with cinnamon and brown sugar. Add salt to taste. Microwave for 30 seconds and then stir. Repeat in 15-second intervals, stirring each time until smooth and thin enough to drizzle.
4. Ladle pancake mix onto hot buttered griddle or skillet. Spiral a spoonful of cinnamon mixture throughout the pancake, and let cook. After flipping, cook so cinnamon mixture begins to carmelize (additional butter may be needed).
5. Once fully cooked, plate pancake with the swirl facing up and sprinkle with breakfast sausage. Then, drizzle with the icing mixture and syrup.
6. Garnish with mint leaves/flowers, serve, and tell Dad he’s the best!
