Ingredients

  • 2 lbs ground beef (93/7)
  • ½ medium yellow onion, diced
  • 12 oz shredded cabbage
  • 1 Tbsp extra-virgin olive oil
  • 1½ tsp garlic powder
  • 15 bread-and-butter pickle chips (optional)
  • ¼ cup grated cheddar cheese
  • Salt & pepper to taste

Potatoes

  • 4 medium red potatoes
  • 1 Tbsp extra-virgin olive oil
  • Salt & pepper to taste

Instructions

Potatoes

  1. Preheat oven to 450°F.
  2. Wash and dice potatoes into medium fry-style pieces.
  3. Toss with olive oil, salt, and pepper; spread on a sheet pan.
  4. Roast 10–12 minutes, toss, then roast another 10–12 minutes until crisp and golden.

Beef

  1. Heat a large skillet over medium-high. Add 2 tsp olive oil and the diced onion.
  2. Cook onion, past translucent, to deeply caramelized browned to bring out sweetness, adding a splash of water if needed.
  3. Push onion aside, add ground beef to the middle – cook until browned. Season with salt and pepper.

Cabbage

  1. Heat 1 tsp oil over medium.
  2. Add cabbage, garlic powder, and salt.
  3. Sauté 3–4 minutes, adding a splash of water to steam if needed.

Make Ahead Mac Sauce

  • ⅓ cup plain nonfat Greek yogurt
  • 1 Tbsp no-sugar-added ketchup
  • 1 Tbsp sweet relish
  • ½ tsp vinegar
  • ½ tsp onion powder
  1. Stir all ingredients together until smooth.
  2. Portion into small containers.

Serve
Layer potatoes, beef, cabbage, cheese, and pickles in a bowl. Top with Mac Sauce and enjoy.
