The Flagstaff House

Where can you find the most unparalleled dining experience?  Where food is not just insanely good but also beautiful?  Flagstaff House, atop Flagstaff Mountain in Boulder,  has been redefining luxury dining and bringing elegance to the Denver food scene for generations.  

Flagstaff House began as a summer cabin in 1929 by Chicago school teacher Hattie Bilchert.  In 1937 a park ranger named  Joe van Gorder bought the cabin to create a place for special events to be held.  It wasn’t until 1954 however, that it became “the Flagstaff House” when the Buelkes family purchased the property and re-established it as an elegant summer restaurant. The next time the property went up for sale, in 1971, it was purchased by Don Monette. “He had always wanted to own just one restaurant that was truly ‘fine-dining’ and to be able to concentrate on making it an incredible experience for his guests.”  The Monett family expanded the property, made it accessible year round, added the outdoor terraces and changed the face of luxe dining in Denver forever.  Current general manager, Adam Monette, and Head Chef, Chris Royster, continue this tradition today.

The Flagstaff House offers awarded New American cuisine, and a world-renowned wine list with impeccable service and the touches of a family owned restaurant. Their four course menu is hard to even describe. It is so delicious! The menu showcases high-quality local, seasonal, and hard to acquire items. From Ahi Tuna Carpaccio or Point Judith Calamari & Fava Bean Salad to begin to a second course of items like Maine Lobster or Rohan Duck Breast & Confit followed by third course items such as English Pea & Quinoa Teriine or Kagoshima A5 Wagyu Au Poivre.  Dessert rounds out the four courses with selections like Dark Chocolate Pot De Creme or Palisade Peach Pain Perdu. You can also try the chef’s tasting menu for a true culinary experience.  

The only thing better than the food, might just be the breathtaking views.  Flagstaff House offers views of Boulder, Denver, and the surrounding cities that will leave you in awe.  The location of Flagstaff House, up atop Flagstaff Mountain, is as unique and special as their food!  A night at Flagstaff House is one you won’t soon forget!
