Dutch Baby Recipe

A surprisingly easy breakfast delight!

Ingredients:

3 large eggs

1/2 cup all-purpose flour

1/2 cup milk

1/4 teaspoon salt

1 tablespoon granulated sugar 

1/2 teaspoon vanilla extract

2 tablespoons butter

lemon curd (I'm partial to Bonne Maman)

fresh berries for garnish

Directions:

1.     Preheat your oven to 400°F and place a 10-inch cast iron skillet into the oven and heat for at least 5 minutes.

2.     Combine eggs, flour, milk, salt, sugar, and vanilla. Mix until completely smooth. You can either mix this by hand or combine in a food processor or blender.

3.     Open the oven door and drop the butter into the preheated skillet. Close the oven and allow the butter to melt, just about 2 minutes (be careful to not let it burn).

4.     Once melted, carefully remove the hot skillet from the oven and pour the batter into the buttered skillet and return to the oven.

5.     Bake for about 20 minutes, until puffed and golden.

6.     Once fully baked, remove the skillet from the oven and drizzle with lemon curd and top fresh berries.

7.     Cut into wedges and serve immediately.
