Move Over, Pumpkins—Apple Cider is Having its Moment

There's something exciting about the transition of seasons from Summer to Fall. The crisper air and visible changes in the color of trees are such comforting signs. Fall is a great time to get creative in the kitchen (since it's not quite as hot!) and savor the flavors of this graceful season. With the chaotic days of summer well behind us, this apple cider-inspired dish from Dorothy Lane Market is sure to get you in the spirit of relaxation, coziness, and all things Autumnal. 

Apple Cider-Glazed Pork

Serves 4

Ingredients

4 boneless pork loin chops
Sea salt and pepper, to taste
2 tablespoons extra-virgin olive oil
1 tablespoon butter
3 garlic cloves, minced
1 teaspoon rosemary, minced
1 pinch red chili flakes
1/4 cup apple cider vinegar
2 cups 100% apple cider
2 teaspoons Dijon mustard

Method

  1. Generously season pork loin chops with salt and pepper.
  2. In a large sauté pan, heat extra-virgin olive oil and butter over medium-high heat until hot.
  3. Cook the pork until golden brown on both sides and internal temperature registers 145 F, about 4–6 minutes per side.
  4. Remove from pan.
  5. Add the garlic, rosemary and chili flakes and sauté until fragrant.
  6. Add the apple cider vinegar and scrape up the browned bits.
  7. Add the apple cider and mustard and bring to a boil, whisking often. Cook until reduced by half, about 20–30 minutes.
  8. Season to taste with salt and pepper.
  9. Add the pork back to the pan to briefly reheat.
  10. Serve with glaze.
