When Dish Society opened in 2014, it was one of the first casual farm-to-table restaurants in Houston. Although the term farm-to-table has become more commonplace, the restaurant's dedication to serving the best local food has remained steadfast. Dish Society might be as well known for their side dishes, like the Citrusy Quinoa Relish shown here, as they are for their entrees, and their ever-changing menu keeps guests coming back for more.
CITRUSY QUINOA RELISH
Serves 6 to 8
The beloved superfood grain gets all dressed up with a bright vinaigrette for a versatile way to get your protein. At Dish Society, it’s stuffed into avocado halves, paired with sautéed salmon or served as a standalone side. Store leftover vinaigrette in the fridge for up to 1 week. It’s delicious as salad dressing or as a marinade for fish, seafood or meat.
Ingredients
For quinoa relish:
2 cups uncooked quinoa
2 tablespoons white vinegar
3½ cups water
½ teaspoon salt
1 cup pico de gallo, homemade or store bought
½ - ¾ cup Citrus Vinaigrette (see below)
For vinaigrette:
¼ cup grapefruit juice
¼ cup orange juice
¼ cup lime juice
¼ cup vegetable, canola, grapeseed, or oil of your choice
3 tablespoons red wine vinegar
1½ tablespoons honey
Salt to taste
Directions
Place quinoa in a sieve and rinse thoroughly under cold water.
In a medium pot, bring water, vinegar and salt to a boil. Add quinoa and bring to a simmer. Cook, uncovered, for about 15 minutes. Taste for doneness. If necessary, add a tablespoon of water at a time until quinoa is cooked through.
Place cooked quinoa on a baking sheet and spread evenly. Cool, and then chill in refrigerator.
Meanwhile, prepare vinaigrette by combining all ingredients in a small bowl. Whisk vigorously. Taste. If you like it sweeter, add a little more honey. Whisk well before adding to chilled quinoa. To serve, place quinoa in a bowl. Add pico de gallo and half a cup of citrus vinaigrette. Mix lightly with a large spoon.
