Festive Tortellini Caprese

This year the Holidays are likely going to look a little different. There probably won't be the office holiday party or the neighbor's Ugly Sweater soiree. We may not be hosting the White Elephant gift exchange or gathering all the extended family for Christmas dinner. But we CAN still bring a little cheer to the table with healthy meals made with love.

For many families, the holiday feast is a potluck affair. But with less people coming to dinner, that also means less people contributing to the cooking. So some menu items have got to be quick and easy! Cue these Tortellini Caprese Skewers w/ Pesto Sauce - full of flavor, timely color, and simple to prepare. This recipe can also easily be made ahead, just keep cold in the fridge. 

Ingredients:

1 package fresh premade cheese tortellini 

8 oz fresh mozzarella ciliegine (cherry size)

1 pint cherry tomatoes

4 oz store bought pesto 

Toothpicks or party picks

Directions:

1. Cook tortellini per package directions. Drain. Let cool to room temperature.

2. Assemble skewers with one tortellini, one mozzarella ball, and one cherry tomato. Repeat until you run out of ingredients. 

3. Place a small bowl in the center of a round plate or platter. Fill with pesto. 

4. Arrange skewers around the pesto in a circle. 

5. Serve with cheer!
