What does a chef make for Thanksgiving? For this article, Laura Clement, Head Chef of Arrow Cocktail Lounge, shared one of her favorite family recipes that uses an often-overlooked delicacy: giblets.
Ingredients
- Turkey giblets: the liver, heart, and neck
- ½ teaspoon salt (or to taste)
- ½ teaspoon finely chopped sage
- 2 chopped hard boiled eggs
- 4 cups water
- All-purpose flour
Steps
- Boil the liver, heart and neck of your turkey until tender — about one hour.
- Remove giblets and chop into small pieces.
- Pull meat off neck bone and add all meat to the broth. Reheat to boiling.
- Add salt and sage.
- Add hard boiled eggs to the broth.
- Stir flour and water together to make a thickening. Stir quickly as you’re pouring in the thickener. Keep adding flour until you achieve desired consistency.
- Pour finished product over turkey, mashed potatoes, or anything else on your Thanksgiving plate!
