Giblet Gravy

A Homestyle Recipe from Laura Clement, Head Chef of Arrow Cocktail Lounge

What does a chef make for Thanksgiving? For this article, Laura Clement, Head Chef of Arrow Cocktail Lounge, shared one of her favorite family recipes that uses an often-overlooked delicacy: giblets.


  • Turkey giblets: the liver, heart, and neck
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon finely chopped sage
  • 2 chopped hard boiled eggs
  • 4 cups water
  • All-purpose flour 


  1. Boil the liver, heart and neck of your turkey until tender — about one hour. 
  2. Remove giblets and chop into small pieces.
  3. Pull meat off neck bone and add all meat to the broth. Reheat to boiling.
  4. Add salt and sage. 
  5. Add hard boiled eggs to the broth. 
  6. Stir flour and water together to make a thickening. Stir quickly as you’re pouring in the thickener. Keep adding flour until you achieve desired consistency. 
  7. Pour finished product over turkey, mashed potatoes, or anything else on your Thanksgiving plate!
