Freshly baked gingerbread cookies are a classic holiday favorite. Here's a simple recipe for a fun projects with the kids or a great homemade gift.
Ingredients:
- 2/3 cup oil
- 1/4 cup molasses
- 1 cup dark brown sugar
- 2 eggs
- 3 cups all-purpose flour
- 2 teaspoons ground cinnamon
- 2 teaspoons ground ginger
- 1 teaspoon ground cloves
- 1 teaspoon baking soda
- 1/2 teaspoon salt

Whisk the flour, spices, and baking soda. Set aside.

Mix oil, molasses, and brown sugar. Add in eggs one at a time, then slowly stir in the flour mixture.

Place the dough onto a heavily floured surface and with floured hands, work in more flour with your hands until the dough is no longer sticky.

Wrap the dough in plastic and refrigerate 3 hours to overnight.

Roll out dough 1/4 inch thick. Cut into shapes. Bake at 350˚ F for 8 minutes on ungreased cookie sheets until they start to crack. Cool for 2 minutes before removing from the cookie sheet.
