Gingerbread Cookies

A Vintage Holiday Recipe

Freshly baked gingerbread cookies are a classic holiday favorite. Here's a simple recipe for a fun projects with the kids or a great homemade gift. 

Ingredients: 

  • 2/3 cup oil
  • 1/4 cup molasses
  • 1 cup dark brown sugar
  • 2 eggs
  • 3 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cloves
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  • Whisk the flour, spices, and baking soda. Set aside.

  • Mix oil, molasses, and brown sugar. Add in eggs one at a time, then slowly stir in the flour mixture. 

  • Place the dough onto a heavily floured surface and with floured hands, work in more flour with your hands until the dough is no longer sticky.

  • Wrap the dough in plastic and refrigerate 3 hours to overnight. 

  • Roll out dough 1/4 inch thick. Cut into shapes. Bake at 350˚ F for 8 minutes on ungreased cookie sheets until they start to crack. Cool for 2 minutes before removing from the cookie sheet.

  •   Cool completely before decorating and enjoy!
