Greek Chicken Lemon Rice Soup

Avgolemono is no ordinary chicken rice soup. There is just something special, and extra luxurious, about Avgolemono. It’s a decidedly rich, comforting chicken soup with a silky broth that’s heavily scented with lemon. Delicious!  I’m telling you, if you have not tried Greek avgolemono soup, you are in for a treat!

What is Avgolemono? Avgolemono, pronounced ah-vo-le-mo-no (the “g” is there, but it’s a lighter g…almost silent), refers to the tasty Greek sauce from which this chicken soup gets it’s name. Avgolemono sauce is a silky and fragrant sauce made of eggs, lots of lemon, and warm broth.

INGREDIENTS:
2-3 lb. chicken breast

1and 1/2 cup white rice

3/4 cup olive oil

2/3 tbsp salt

1/2 black pepper

1 tbsp chicken base

5 eggs

1/2 cup of fresh lemon juice

PREPARATION:

Clean chicken and remove any prices of fat or skin. Place chicken in 2 gallon pot with one gallon of water and bring to a boil. When froth appears, remove it from the surface with a large spoon. Put the oil, the salt, the pepper and the chicken base In the pot with the chicken and let boil for 30-40 min. When ready take out the chicken, let it cool a little and cut it into very small pieces. Add more water into the pot if needed to make around 3 quarts and bring it to a boil and then add the rice ,stir and let the rice cook until the rice is soft. Remove the pot from the heat and it the chicken meat into the pot. In a mixer beat the eggs until fluffy and then start adding some of the stock and the lemon juice . When sauce starts getting warm and thick stop the mixer and slowly start pouring the sauce into the pot and continue to stir.

After the sauce is finished, continue to stir for a few minutes until the broth and the sauce have blended nicely. Serve hot!
