Hearty Avocado Toast with Greens & Poached Egg

Ingredients

2 fresh eggs

2 tablespoons vinegar (any kind)

2 slices whole grain, sourdough, or bread of choice

1 ripe avocado

Handful of greens (microgreens, spinach, chard, arugula, etc.)

Salt and pepper, to taste

Balsamic glaze, for drizzling (optional)
Instructions

Heat the poaching water
Fill a medium nonstick, wide saucepan with 2½–3 inches of water and add the vinegar. Cover and bring to a full boil. -
Crack the eggs
Carefully crack each egg into its own small ramekin or bowl. -
Poach the eggs
Turn off the heat. Working one at a time, tip the edge of each ramekin into the hot water, allowing a little water to swirl in and begin setting the egg. Gently release the egg into the pan.
Cover with the lid and do not lift it.-
Poach 3–4 minutes for runny

Toast the bread
While the eggs poach, toast your bread of choice. -
Prep the avocado
Smash the avocado and season with salt and pepper. -
Finish the eggs
Use a slotted spoon to remove the poached eggs and briefly drain them on a paper towel. If they’re softer than you prefer, slip them back into the hot water for another minute or two. -
Assemble
Spread avocado on the toast, add a handful of greens, top with a poached egg, and finish with salt, pepper, and, if desired, a drizzle of balsamic glaze.
