When searching for the ideal summer dish, we turned to Cathy Can of Cat’s Kitchen, a full-service catering and private chef company specializing in customized catered experiences. Caribbean Chicken
2-3 pounds boneless, skinless chicken thighs
2 tablespoon soy sauce
¼ cup orange juice
2 tablespoons lime juice
¼ cup brown sugar
2 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon dried oregano
salt and pepper to taste
olive oil
skewers
(If wooden, soak in water for 30 minutes to prevent them from catching on fire)
Pineapple Salsa
½ ripe pineapple
2 Roma tomatoes, roughly chopped
½ of a large red onion (or 1 full small one), finely chopped
½ of a red pepper, finely chopped
1 jalapeno, finely chopped (seeds taken out if you don’t want it spicy)
½ cup of cilantro, finely chopped
juice of one lime
olive oil
salt and pepper to taste
(a touch of sugar depending on sweetness of pineapple)
Preparation
Cut chicken in one-inch-wide cubes and trim excess fat.
Season chicken and dress with olive oil.
Massage chicken with seasoning, making sure each piece is well coated.
Leave it to marinate 30 minutes or overnight.
While chicken is marinating:
Grill pineapple slices until you see slight grill marks, chop, and set aside to cool down.
Combine remaining salsa ingredients and cooled down chopped pineapple.
Set aside, let the flavors marry each other!
Skewer chicken and grill over a medium high heat for 5 minutes.
Flip chicken and cook for another 5 minutes or until chicken is cooked all the way through. (Cooking time will vary depending on cube sizes and temperature of grill)
Remove chicken from grill and let it rest for 2-5 minutes.
Garnish with pineapple salsa and enjoy!
