Date Night Dinner: Grilled Chicken with a Kick

Chicken Breasts with Lemon, Thyme and Red Pepper Flakes

Set hearts racing with this simple yet elegant chicken dish that features bold flavors and a mild spice kick.  All you need are 8 delicious ingredients (many you can find in your pantry) and a hot grill to make this mouth-watering grilled chicken dish that is sure to delight.  Take out the red chili flakes if you like your chicken on the mild side, or add more flakes if you like it hot!

Ingredients

  • 1 1/2 tablespoons lemon juice
  • 1/4 teaspoon dried thyme
  • 1/2 teaspoon dried red-pepper flakes
  • 1 clove garlic, minced
  • 1/4 cup olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon fresh-ground black pepper
  • 4 bone-in chicken breasts (about 2 1/4 pounds in all)

Directions:

Step 1    

Light the grill or heat the broiler. In a shallow dish, combine lemon juice with the thyme, red-pepper flakes, garlic, oil, salt, and black pepper. Add more red pepper flakes for an increased spice level. Coat the chicken with the mixture. Let chicken marinate for 30 minutes.

Step 2    

Grill the chicken breasts over moderately high heat or broil them for 8 to 10 minutes. Turn and cook until the chicken is just done, about 10 minutes longer.

Chef Tip:  Swap bone-in chicken breasts for boneless.  Cook boneless breasts for 5 minutes on each side.
