Grilled Skirt Steak With Cocoa Spice Rub

A Sweet And Spicy Reinvention Of A Grilling Classic

Gwynn Galvin of Swirls of Flavor is here, just in time for grilling season! With Father's Day around the corner, Gwynn's Skirt Steak recipe is perfect for any backyard barbeque with its sweet twist. With just a few ingredients, this steak will be on your menu all summer long. 

Ingredients: 

2 tablespoons packed brown sugar

1 tablespoon unsweetened cocoa powder

1 tablespoon chilli powder

1 1/4 teaspoons kosher salt 

1 teaspoon garlic powder

1/8 teaspoon cayenne pepper

2 pounds of beef skirt steak 

Directions: 

1. Make the rub: Combine brown sugar, cocoa powder, chili powder, kosher salt, garlic powder and cayenne.

2. Prep the steak and grill: Rub both sides of the skirt steak with Cocoa Spice Rub and let stand 30 minutes at room temperature. Meanwhile, brush grill grates with oil and preheat grill for direct heat grilling.

3. Grill and serve: Grill steaks until desired doneness, turning once. The meat thermometer will register 145°F for medium-rare. Let stand 5 minutes before slicing.

Tips and substitutions: 

Like it a little spicier? Increase cayenne pepper to 1/4 teaspoon

Cook under the broiler instead of on the grill
