Almond Poppyseed Protein Muffins

Ditch the muffin top with these guilt-free muffins!

Healthy and easy to make. Perfect for a quick breakfast on the go!

Ingredients

Yield: 12 muffins

2 cups plain protein Kodiak Cakes mix
2 scoops plain Vital Proteins collagen powder (you can sub 1 scoop vanilla protein, but I like to use collagen because it’s tasteless, has protein in it and also has other great benefits)
2 eggs
1 teaspoon baking powder
1 cup unsweetened vanilla almond milk
3 1/2 teaspoons almond extract
6 full liquid stevia drops or packets (I use Trader Joe's brand)
1 tablespoon poppy seeds

Directions

Mix all ingredients together. Spoon into muffin tin or baking cups and bake for 14-16 minutes at 350 degrees. Drizzle with almond butter and garnish with shaved coconut.
