Healthy Carrot Cake Doughnuts

What Kid Doesn't Love Doughnuts?

Here is a great way to give your kiddo a treat while sneaking in some fruits and veggies. This recipe can easily be made gluten-free and/or vegan and makes for a perfect pre-trick-or-treat snack! 

Carrot Cake Doughnuts

Ingredients

For the Doughnuts:

2 cups whole wheat pastry flour or 1:1 gluten-free flour (such as Cup4Cup or Trader Joe's)

2 teaspoons baking soda

1/2 teaspoon salt

2 teaspoons ground cinnamon

1/2 teaspoon ground ginger

2 cups grated carrots

1/2 cup unsweetened shredded coconut (optional)

1/2 cup chopped walnuts (optional)

1/2 cup raisins (optional)

1 cup brown sugar

3 large eggs (or 3 flax “eggs” – see note below*)

1/3 cup vegetable oil, coconut oil or avocado oil

1/2 cup crushed pineapple

2 teaspoons vanilla extract

1/4 cup orange juice

Cooking spray

For the Icing:

2 tablespoons cream cheese, softened

2 tablespoons powdered sugar

2 tablespoons water

Method

1. Preheat oven to 375 F. Spray doughnut mold with cooking spray of choice.

2. Sift flour, baking soda, salt and spices into a large bowl. Stir in carrots as well as the coconut, walnuts and raisins (if using).

3. In a separate, medium-sized bowl, beat brown sugar and eggs (or flax eggs) until combined. Add oil, pineapple, vanilla and orange juice. Stir to combine.

4. Add wet ingredients to the flour mixture, and stir until well-incorporated. Stir in raisins.

5. Spoon batter into the prepared doughnut mold, filling to the top.

6. Bake for 20-25 minutes or until cake tester inserted comes out clean. Let rest 15 minutes and then pop out doughnuts onto wire rack to cool.

7. While the doughnuts are baking, make the icing. In a small bowl, whisk together the cream cheese, powdered sugar and water. Add more sugar or water to your taste and desired consistency.

8. Once the doughnuts are cool enough to handle, dip each doughnut into the icing or drizzle them with a spoonful of icing like pictured.

Enjoy! Makes about 12 doughnuts.

*Flax egg: In a small bowl, mix 1 tablespoon of ground flaxseed with 3 tablespoons of water. Let sit 15 minutes to thicken. Makes 1 “egg.”

Barbecued organic chicken

Directions

Toss all ingredients in @chosenfoods avocado oil spray, @traderjoes 21 Seasoning Salute and sea salt. Add a side of barbecued organic chicken.

Organic Pan-Fried Chicken

1. Pan-fry organic chicken tenders in coconut aminos on high
2. Boil my go-to fave, @lotusfoods gluten-free rice noodles
3. Sauté veggies with coconut aminos and a tiny bit of @traderjoes sesame oil
4. Mix all together and top with chili flakes, aminos and cashews
