Ingredients:
15 pitted Medjool dates, soaked in warm water for 10 minutes
3/4 cup unsalted cashews
3/4 cup unsalted almonds
1 cup Greek Yogurt, flavor of your choice (I like Siggis)
Assorted sliced fruit
Line the bottom of a 9-inch pie dish with parchment paper.
Soak the dates in warm water for 10 minutes. Drain and cut into smaller pieces.
Using a blender or food processor, pulse the dates and nuts until a dough forms and the nuts are broken up. This will be sticky. Press it across the bottom and up the sides of the pie plate.
Spread the yogurt on top of the crust and add fruit.
