There is nothing more enjoyable than indulging in a mouth-watering, chicken salad sandwich at your favorite diner… That is until you step on the scale the next day. Some of these mayonnaise-filled sandwiches range between 500-1000 calories -- and don’t even think about adding on a side of fries. In keeping with this issue’s health and wellness theme, we decided to pair up with Sarah Pemberton, owner of Café Nune, to find a healthier alternative to one of America’s diner classics. Sarah’s goal is to help her customers keep their diets’ balanced, colorful and enjoyable. Her Smashed Chickpea Salad will fool your senses into believing that you are eating the real thing. Next time you are craving a chicken salad sandwich, try Sarah’s version instead, and your waistline will thank you.
Ingredients
Chickpeas (15 oz can)
¼ cup Vegenaise
3 tbsp grainy dijon mustard
¼ cup diced celery
¼ cup diced onion
2 tbsp minced dill
Salt (to taste)
Pepper (to taste)
Avocado
Lettuce
Instructions
Dice celery and onion
Mash chickpeas (rough mash)
Add Vegenaise and mustard to mashed chickpeas
Add celery, onions and dill to mixture
Add salt and pepper (to taste)
Garnish with avocado and serve on a slice of lettuce
