Bex's Winter Glow Mocktail
In a shaker, mix 1/2 cup spiced cranberry juice (just add a pinch of cinnamon and clove to cranberry juice).
Add 1/4 cup fresh orange juice for a holiday citrus twist.
Include a splash of pomegranate juice for color and tartness.
Shake well with ice, then strain into a glass with fresh ice.
Top with sparkling water for a touch of sparkle.
Garnish with an orange twist and a sprig of rosemary for a festive, wintry look.
Optional: Add 1 oz of vodka for a cozy, warming addition that complements the spices and citrus.
Tonya's Cranberry Shortbread Cookies
This festive fresh cranberry shortbread cookie uses fresh cranberries instead of dried. The fresh cranberries give this recipe a nice tart flavor and I promise you will not miss the extra flavor.
INGREDIENTS
1 cup butter room temperature
1/2 cup granulated sugar
1 cup fresh cranberries roughly chopped ( you may want to paper towel dry the cranberries so you do not end up with pink cookies)
2 cups all-purpose flour
1/2 teaspoon grated orange zest
1. Combine butter and sugar and mis together in a mixing bowl and beat on medium speed until well blended.
x2. Add the flour about 1/2 at a time and mix until combined
3. Add 1 cup chopped raw cranberries and 1/2 tsp grated lemon zest and mix well.
4. Transfer about 1/2 cookie dough onto plastic wrap and roll into a log and refrigerate at least an hour.
5. Continue with the remaining dough.
6. Refrigerate for at least 1 hour or overnight.
7. Preheat oven to 350 degrees
8. Slice dough into 1/4 rounds onto baking sheets and bake for 8-10 minutes.
9. Remove baked cookies and transfer to a wire rack for cooling
Makes about 2.5 dozen- ENJOY!
A dash of finely chopped nuts adds well to this recipe
Heather's Merry Mistletoe Mule
In a copper mug, combine 2 oz of a vodka of choice, 1 oz of cranberry juice, and 1 oz of lime juice. Fill the mug with ice, top it with ginger beer, and garnish with a few beautiful cranberries and a crisp sprig of rosemary or mint.
