The New York Strip comes from a section near the cow’s spine where the muscle remains tender. It’s a cut that has both sophistication and satisfying bite in every mouthful. The short loin also yields the porterhouse, T-bone, and segments of the tenderloin.
First, preheat the oven to 400°F. Rub the steak with oil and spices and let rest for an hour. For the perfect sear, start with a cast-iron skillet or a heavy pan capable of retaining high heat. Use an oil with a high smoke point to prevent burning. Once the pan is sizzling hot, place the well-seasoned steak in and let it sear undisturbed for 1-2 minutes per side. Transfer to the oven. Preparation:
