THE JET FUEL IS A COCKTAIL THAT TAKES A VERY LONG TIME TO COMPLETE. It is one of my Clairified Cocktails. Essentially a variation of a Clarified Milk  Punch which dates all the way back to  late 1600’s with the first recorded recipe being documented in 1711. The process was a way of using milk, alcohol, and citrus to make beverages with an extended shelf life.  During the height of it’s popularity Queen Victoria had appointed the company of Nathaniel Whisson as the “Purveyors of Milk Punch to her Royal Majesty. So needless to say it has been a popular technique used for quite some time. I’ve used the process of curdling milk with a base cock-tail in order to create one of the best cocktails at P.S. I like it when guests look at me in a very confused way after I mention curdling milk for a drink. But after I explain I use the curd to act as a very strong filter, along with a cheese clothe and a fine coffee filter, the finished product actually ends up being almost as clear as water. The Jet Fuel is one of those drinks that plays with a customers mind, it looks like water which in some cases makes people think there will be no flavor, but as you sip it explodes with a the flavor of what is essentially a traditional Aviation cock-tail with a very smooth and almost silky mouth feel. It’s a long process to get the final product, but it is well worth the wait.
