A Spring Peach Caprese from the Queen Creek Olive Mill

Spring is in the air! That first warming sunshine that breaks through the slow thaw of winter is a welcome change. It gives you a fresh sense of new beginnings, a pep in your step, and a desire for those seasonal Spring fruits and veggies. The Queen Creek Olive Mill provides us with a new twist on an Italian staple, the Caprese salad! This classic recipe even seems to represent the Italian flag itself on a plate. Yet, in this recipe, an unexpected addition of sweet peaches introduces another ingredient that mingles new textures and flavors for even more impact and delight. This recipe is quick, easy, and at the same time perfect to enjoy on a sun-drenched patio. Then served alongside a warm, crusty ciabatta and a cool, crisp glass of white wine, and you can close your eyes and imagine yourself in Tuscany.

SPRING PEACH CAPRESE

Time: 20 minutes

Servings: Makes 4

Ingredients

2 Fresh peaches

8 oz. of Fresh Mozzarella

2 Tomatoes

Handful of fresh basil leaves

1 Tbsp. of Queen Creek Olive Mill's Peach White Balsamic Reduction

2 Tbsp. of Queen Creek Olive Mill's Fresh Crush Basil Olive Oil

Sea salt for taste

Black Pepper for taste

Directions

1. Slice peaches, mozzarella, and tomatoes.

2. Arrange on plate by alternating between the peach, mozzarella, and tomatoes.

3. Drizzle with the Peach White Balsamic Reduction.

4. Finish with Fresh Crush Basil Olive Oil.

5. Garnish with a sprinkling of fresh basil leaves, add salt and pepper to taste.
