The Irresistible Honey Walnut Cake



  • 2 cups chopped walnuts
  • 3 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 5 large eggs
  • 1 1/2 cups sugar
  • 1 cup olive oil
  • 1 cup milk
  • 1/4 cup cognac (or orange juice)
  • Zest of one orange


  • 2 cups water
  • 2 cup sugar
  • 1 cup honey
  • 2-3 cinnamon sticks
  • 3-4 whole cloves
  • 1 slice of lemon peel


  1. Preheat oven to 350°F and grease a 9x13 inch baking pan.

  2. In a bowl, combine dry ingredients and set aside.

  3. In a separate bowl, beat the eggs and sugar until the mixture becomes creamy.

  4. Slowly add olive oil, milk, cognac and zest to mixture.

  5. Gradually fold the dry ingredients into the wet mixture until combined.

  6. Pour batter into pan.

  7. Bake 40-45 minutes.

  8. While the cake is baking, prepare the syrup. In a saucepan, combine syrup ingredients. Simmer for 10 minutes. Remove from heat and let it cool.

  9. Remove cake from oven and while it's still warm, pour the syrup evenly over the entire surface.

  10. Allow cake to cool completely and absorb syrup before cutting.
