New KOVO Location Puts Modern Twist on Mediterranean Fare

A unique concept to the Valley, KOVO highlights a wide selection of cuisine from the Mediterranean region. KOVO showcases the traditional cuisines of the Mediterranean region, combined with new world flair and ingredients.  

According to KOVO Modern Mediterranean’s owner, Yianni Ioannou, "Dining out in the Mediterranean culture is a very celebrated and social affair. At KOVO, we’ve created an energetic, communal environment within the restaurant, from our community table to our open dining room, to our large, wraparound bar and patio. This allows guests to have a more adventurous dining experience. The menu features a wide selection of shareable plates, which are great for enjoying with a date or a close group of friends.” 

The Greek word kovo means “to carve,” and as such, rotisserie meats will be predominately displayed in the open kitchen and will be served in signature entrees. Selections such as lamb, beef and organic chicken will cook vertically on the rotisserie and will be carved to order. A wood-fired oven will produce crispy pizzas, such as the Napoletana, Blanca and Della Carne, as well as other wood-fired specialties.

For guests wishing to savor a sampling of Mediterranean cuisine, there will be a wide variety of shared plates, such as housemade hummus and tzatziki, grilled eggplant and halloumi, sheftalia (homemade Greek sausage) and grilled octopus. In addition, other items found throughout the region will be served, such as bruschetta and cheese boards, lamb burgers, kebabs and salads.

A visit to KOVO will include good food, great atmosphere and of course, an intimate time with family and friends.
