For years, Park Cities staple Origin Kitchen + Bar has been serving seasonal fare with an emphasis on local, fresh, and healthy ingredients. For instance, the only oil they use while cooking is olive oil; they make all their dressings in-house; they only sweeten dishes with honey, maple, or coconut sugar; and they use pasture-raised, grass-fed meats. One of Origin Chef Alejandro Alarcon’s favorite dishes is the sesame-crusted ahi tuna salad, and it is as delicious as it is pretty. Here, he shares the recipe so you can make it anytime a healthy craving hits.

Ingredients:

  • 3 cups spring mix
  • 2 oz. golden raisins
  • 1 oz. goat cheese
  • 2 oz. Marcona almonds
  • 1/2 cup cherry tomatoes
  • 1/2 avocado
  • 1 ahi tuna steak
  • Sesame seeds
  • 2 oz. green goddess dressing (16 servings = 1 cup basil leaves, 2 eggs, 3 garlic cloves, 1 tsp. salt, 1/4 cup shallots, 1/2 cup fresh spinach, 1 oz. anchovies, 1/2 cup lime juice, 1/4 cup coconut cream, 2 cups avocado oil)

Directions:

Step 1. Slice avocado and cherry tomatoes.

Step 2. Combine spring mix and green goddess dressing together.

Step 3. Coat ahi tuna steak in sesame seeds and sear for 1 minute per side on high heat.

Step 4. Slice tuna and top dressed spring mix with all of the ingredients. Enjoy!
