Mediterranean Salad

Ingredients

2 cups arugula, mixed greens & romaine

½ red onion chopped

½ cup cherry tomatoes  

½ cup kalamata olives

1 avocado diced

½ cup feta cheese

Balsamic Vinaigrette

½ cup olive oil

¼ cup balsamic vinegar

1 teaspoon honey

1 teaspoon Dijon mustard

1 shallot, minced

1 clove garlic, minced

salt and ground black pepper to taste

Instructions:

Whisk all the dressing ingredients together in a mason jar and shake until all ingredients are combined.

Combine the salad ingredients in a large bowl. Drizzle the dressing and toss.

Serve and enjoy!

Macaroni Bolognese

Ingredients:

1/4 extra virgin olive oil

1 onion, finely chopped

1 carrot medium diced

1 celery rib medium diced

2 ounces of pancetta diced

1 pound ground beef

1 pound ground veal

1 pound ground pork

2 cloves garlic pressed

3/4 cup white wine dry

28 oz. Italian peeled tomatoes

salt / pepper to taste

1/4 cup heavy cream

Grated Parmigiano

Instructions:

Cook macaroni keeping in mind the package directions. Prepare the Bolognese sauce.

Heat olive oil and braise the onion until softened. Add carrot, celery, and garlic. Fry for 3-4 min., then add the pancetta, beef, veal, and pork ground and braise, taking care not to have clumps form. Fry for another 4-5 min.

Add the tomatoes, wine, cream, salt, and pepper to taste. Cook sauce for 15 min on low heat, allowing it to boil. Add black pepper and salt to taste.

Serve the macaroni with the Bolognese sauce on top. Sprinkle grated parmigiano.
