Mango salsa is easy to make, made with fresh ingredients, and goes well with a variety of dishes. Serve it up with fresh tortilla chips, use it on a taco or salad, or use it as a topping for grilled salmon or steak. Enjoying this fruity salsa with shrimp will transport you to the Caribbean. This recipe makes about 3-4 cups (depending on the size of your mangos).

Ingredients:

  • 3 ripe mangos, peeled, pitted, and diced (about 2 cups)

  • ½ cup red onion, finely diced

  • 1 red bell pepper, cored, seeds removed and finely diced (about ¾ cup)

  • 1 jalapeño, seeded and finely diced

  • 1/4 cup cilantro leaves, finely chopped

  • 1 lime, juiced

  • 1/4 teaspoon salt

Directions:

  1. In a large serving bowl, combine the prepared mango, bell pepper, onion, cilantro, and jalapeño. Drizzle with the juice of one lime and sprinkle in the sea salt. Stir everything together until combined.
  2. Let the salsa rest for 10 minutes for the flavors to blend together.
