I Remember Mama

One of our Chef Pauli Reep's favorites from her mother's recipe box.

My Mama was a great home cook. She made everything with such care and love for her family which added that "special something" to every dish. 

This strata recipe has been a part of my life for as long as I can remember. Mama would make this often, especially when friends and family visited from out of town. It’s easy to prepare and succeeds in a stress-free morning because it’s prepared the night before. I remember Mama when I smell the lovely aroma. It’s comfort and ease wrapped up into one delicious dish.

Mama’s Sausage Strata

Serves: 8

8 slices of bread, crusts removed, if desired

1 lb. sausage, browned.

½ cup mushrooms, roughly chopped

½ cup shredded Swiss cheese

½ cup shredded sharp Cheddar cheese

¾ cup heavy cream

1 ¼ cups milk

1 tsp. Worcestershire sauce

1 tsp. prepared mustard

6 eggs, slightly beaten

Salt and pepper as desired

Directions:

Grease 9" x 13" pan.

Cube bread, after removing crusts.

Line the bottom of the pan with bread. Cook sausage and drain any grease. Sprinkle over bread and add mushrooms and cheese.

Mix cream, milk, and eggs. Stir in seasonings and pour over sausage and bread. Cover and refrigerate overnight.

Remove Strata from the fridge and let set at room temperature until the oven has preheated to 375 degrees. Bake uncovered for 35 – 45 minutes or until fully set and browned on the top.
