Pull-Apart French Toast Muffins
Ingredients:
1 package tofu (drained and pressed)
13.5 oz coconut milk
1/2 tablespoon cinnamon powder
1/2 cup sugar
6 bolillo rolls quartered
Instructions:
1. Blend all liquid ingredients in a high-powered blender until completely smooth
2. Place quartered bolillo rolls in Tupperware. Dump liquid in container with bolillo and let it absorb
3. Spray muffin tin with cooking spray. Place soaked bolillo pieces in muffin tins until each is full
4. Bake at 350 degrees for 20 minutes
BUBBLY BERRY
Ingredients:
1oz GIN
3/4 oz Lemon Juice
1oz simple syrup
1 Strawberry
10oz Sparkling Wine
Instructions:
1. Add lemon juice, simple syrup, and strawberry in shaker and muddle
2. Add gin
3. Fill shaker with ice
4. Strain into coupe glass and add sparkling wine
5.Garnish with strawberry
6. Enjoy!
