Start Your Own Healthy Journey With These Clean, Delicious Recipes From Vibe Owner Shannon Weston

Enjoy these healthy recipes for a healthy New Year, courtesy of Shannon Weston, owner of Vibe Superfood in Lone Tree.

Shannon started Vibe after going through a personal journey of trying to get to the root of her son's food allergies, which led her to rethink the Standard American Diet of processed food her family was consuming. At the encouragement of her children, she opened Vibe to share with the community what they learned in changing the way they eat. Everything at Vibe is gluten-free, dairy-free, and free of chemicals and refined sugars.

Vibe offers smoothie drinks and bowls, bone broth, coffee, immunity shots, juice cleanses, among other treats. 

"We are also on a mission to be as sustainable as possible, with using only packaging that is compostable with a small amount that is recyclable, and offering composting and recycling at our store," Shannon says. "We are so grateful for our health and our family, and now our amazing employees and wonderful customers who become like family."

Healing Chicken Soup

Use all organic ingredients if possible

  • 1/2 gallon chicken bone broth
  • 2 cups cooked shredded chicken
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 2 TBS chopped fresh oregano
  • 2 TBS chopped fresh parsley
  • 3 TBS butter, ghee or avocado oil 
  • Salt and pepper to taste

Heat oil, butter, or ghee and add carrots, celery, and onion to soften- about 5 minutes.  

Add bone broth and bring to a simmer for 10 min or until veggies are softened.  

Add chicken just to warm through.  Top with fresh chopped parsley and serve! 

Can add cooked rice, noodles, quinoa for more body or to make more filling.  

Green Smoothie

Use all organic ingredients if possible

  • 1/2 cup kale
  • 1/4 cup spinach
  • 1/2 green apple
  • 1/2 cup frozen bananas
  • 1/2 cup frozen mango
  • 1 inch slice of fresh ginger
  • 1 1/2 cups coconut milk 
  • 1 tsp raw honey
  • 1 pinch cinnamon

Combine all ingredients and blend well!
