When it comes to New Year’s Eve celebrations, you certainly don’t want to spend all your time in the kitchen while your guests enjoy themselves in another room without you. That’s what I love about these two, delicious recipes. Each of them has only a few ingredients that you can prep ahead with minimal last-minute finishing touches, and you will have more time to enjoy the festivities of the evening. Enjoy your New Year with ease!
Rosemary St. Germain Champagne Cocktail
Ingredients:
- 1 oz St. Germain liqueur
- 2 tsp rosemary simple syrup
- 1½ parts Champagne (Brut or Prosecco)
- Frozen cranberries
- Small rosemary sprigs
Instructions:
1. Pour 1 oz St. Germain into a champagne glass
2. Add 2 tsp of Rosemary Simple Syrup (Make ahead: 1 cup sugar, 1 cup water boiled with 4 rosemary sprigs. Cool and strain and store in the fridge for up to 1 month).
3. Top with Champagne.
4. Add rosemary sprig and frozen cranberries to help keep the drink chilled.
5. Enjoy!
Crispy Prosciutto Roll-ups
Makes approximately 14 roll-ups
Ingredients:
- 6 ounces prosciutto, about 14 slices
- 4 ounces Boursin cheese, chive and shallot flavor
- ¼ cup pistachios, toasted and chopped small
- Honey for drizzling
Instructions:
1. Toast the pistachios in a small skillet over medium heat. Once cooled, chop into small pieces.
2. Make sure the sliced prosciutto is cold as it will be easier to work with. Lay a piece of prosciutto down flat on your work surface. Spread a small amount of Boursin cheese to the end of the prosciutto and roll it up. Repeat until everything is rolled.
3. Heat a nonstick griddle pan over medium-high heat. Lightly spray it with oil. Pan-sear the roll-ups on each side for 1-2 minutes, or until they are lightly golden brown. Remove them from the pan and add to a serving platter. Drizzle with honey and top with chopped pistachios.
4. Serve warm and enjoy!
