The Hackebeils Have Created A Fun Outdoor Space in Comfort

Landyn and Michelle Hackebeil enjoy their outdoor kitchen built behind the lovely 1913 historic home that Landyn remodeled in Comfort. Originally owned by the Lindner family, long-time residents of Comfort, the couple purchased the home from the Lindner family trust when the grandmother passed on.

Raised in Hondo, Landyn began his Texas Traditions custom home building company in 2014. As a contractor/builder of homes, for five years he lived in five different houses. From Helotes to Bergheim to Welfare and then finally to Comfort where he and Michelle settled in the former Lindner home. Originally Landyn planned to flip the house but the couple fell in love with the town and the remodel and moved in at the beginning of 2020.

Landyn inherited the remodeling gene from his mother who loved to create new living spaces for the family. Landyn still does work for the family business, Relmco, located in Hondo. Relmco Inc. is a bridge and heavy highway general contractor specializing in bridge, storm drain, and concrete flatwork. The company was established in 1995 and primarily has been involved in TxDOT, county, and city work.

Landyn and Michelle also purchased the old school house, meat market and another building in Comfort on High Street. There is a small hair salon in one building and the Hackebeils created a small bed and breakfast called Texas Comfort in the other part of the buildings. The B&B has four bedrooms and baths. There is a small chapel in front of the structure where they hope to rent for small weddings.

The Hackebeils shared their special recipe for Jalapeno Burger Jam. It can also be used as a dip or poured over cream cheese. It can be stored in the refrigerator for up to one week.

Jalapeno Burger Jam

4 T butter

½ yellow onion (diced)

1 C brown sugar

4 jalapenos (diced)

2 T spicy mustard

Melt butter over medium heat in saucepan. Add onions and saute’ until clear. Add other ingredients and stir until mixture starts to bubble. Reduce to a simmer and let set until the mixture thickens to jam consistency.
