Creamy eggplant, a sweet crunch of peas and freshness of lemon awakens the senses in this vibrant dish
Snow Peas with Eggplant
Ingredients:
2 handfuls snow peas
6 baby eggplants, halved
2 cloves garlic, chopped
Zest of 1 lemon
Juice of half a lemon
Salt and pepper
1 tbs butter
Olive oil
Directions:
Preheat oven to 425 degrees.
Step 1. Coat eggplants with oil, salt, pepper and roast, cut side down, for 20 minutes.
Step 2. Remove strings from snow peas. In a skillet on medium high heat, melt butter with a little oil, add garlic, peas and season with salt and pepper. Cook for 2 minutes, stirring.
Step 3. Add lemon zest, juice and eggplant, cook for 1 more minute.
Step 4. Transfer to a bowl and serve as a side or over your favorite pasta.
