What comes to your mind when the buds start coming out on the trees and the flower bulbs pop from the earth? If you're at all like me, my first thought is a spring picnic! I can't wait to get outside, spread a blanket, and share a meal with a friend. My go-to choices are made out of simplicity to make the experience even more enjoyable. I've chosen a fresh Cobb Salad Sandwich served with a Cucumber Quinoa Salad, fruit, and a nice bottle of wine to share. To top it off I add a favorite cookie. My choice is Salty-Sweet Butter Pecan. Cucumber Quinoa Salad
- 1 English cucumber, diced
- 2 cups chilled cooked quinoa
- 1/2 cup diced red onion
- 1/2 cup crumbled feta cheese
- 1/3 cup roughly chopped fresh basil leaves
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar or red wine vinegar
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon Italian Seasoning
- pinch of salt and black pepper
Instructions
Toss all ingredients together until combined.
Whisk olive oil through the salt and pepper together in a small bowl until combined.
