Sweet Potato Casserole
Filling:
3 large sweet potatoes
1/2 cup of milk
1 cup of white sugar
1 stick of salted butter
2 teaspoons of vanilla extract
3 large eggs beaten
Topping:
1 cup of brown sugar packed
1/2 cup of self rising flour
1 stick of salted butter (soft)
1 cup of chopped pecans
Instructions:
1. For sweet potatoes: Add peeled and cubed sweet potatoes to a large pot of salted water. Bring to a boil over high heat, then lower the heat to simmer and cook until the potatoes are very tender, 15-20 minutes. Drain and cool. Mash the sweet potatoes.
2. For the filling: Preheat the oven to 350 degrees F. Butter a 2-quart baking dish. Blend together the mashed sweet potatoes, milk, white sugar, butter, vanilla and eggs. Pour the blended mixture into your baking dish.
3. For the topping: Combine the brown sugar, self rising flour, salted butter, and chopped pecans together until the mixture clumps together. Spread the mixture on top of the sweet potatoes. Bake for 30 minutes covered and then 30 minutes uncovered. (1 hour total)
