Ingredients:
- 2 cups Chicken stock
- 2 cans Black beans
- 1/2 Yellow onion
- 1 Bell pepper
- 1 cup Long grain white rice
- Lean beef
- Shredded cheese
- Iceburg lettuce
Directions:
- Use a pressure cooker to prepare rice after rinsing. Use at a 2:1 ratio with chicken stock and cook for 4 minutes.
- Dice your onion and bell pepper. Stir fry in a pan. Add beef and cook with vegetables until medium well. Dash oregano, garlic, salt, and pepper for taste.
- Strain and rinse beans, then add to beef, onion, and pepper mixture.
- Add cooked rice to beef, bean, and veggie mixture.
- Divide into glassware for the week ahead.
- Prep sides of cheese and lettuce for toppings.
