Pearls are always appropriate in Palm Beach

Palm Beach has always understood luxury. But the way we experience it is changing. The most memorable events aren't the most formal — they invite guests in to interact, discover something unexpected and feel part of what's happening, not simply watch it unfold.

Few ingredients are having more fun with that than caviar. For generations it came with rules — proper service, spoon, accompaniments. I love and respect those traditions; a beautiful blini, crème fraîche and exceptional caviar will never go out of style. But caviar is also ready to come out and play.

Taking Caviar for a Spin

That was part of the inspiration behind The Caviar Bar Co. and our Caviar Cart at Evolved Catering & Events. I wanted to take this extraordinary ingredient out of the traditional dining room and make it part of the party itself.

Beautifully styled beneath its canopy, the cart becomes a focal point, but it’s also interactive. Guests watch us compose bites, ask questions, try something new and often come back with friends. Suddenly, caviar becomes social.

Roaming service takes that idea a step further, bringing caviar directly to guests as they mingle. I love that spontaneity—it suits the natural flow of Palm Beach entertaining, where a party might begin poolside, move through the garden and end around the dinner table. The food should be able to move with it.

Beyond the Blini

Part of what excites me most is figuring out what else caviar can do — Florida blue crab, tuna, a crisp potato, or something unexpected entirely.

One favorite pairing is the simplest: a good potato chip, crème fraîche and caviar — salty, creamy, crisp, briny, nostalgic meeting a great delicacy. That's modern luxury: when every ingredient is excellent, simplicity can be sophisticated. I've also played with dramatic presentations, like caviar pies and cakes — centerpieces everyone digs into before anyone's taken a bite.

Then there’s the caviar bump. Served directly from the back of the hand, it’s probably the least traditional way you can eat one of the world’s most traditional delicacies—which is exactly why I like it. There’s no elaborate presentation and no real ceremony. It’s simply a great taste of caviar and a reminder that an exceptional ingredient doesn’t always need to be taken quite so seriously.

A Matter of Taste

As playful as caviar can be, I'm serious about what we serve. My nutrition background and master's in Food Policy from City University London shaped how I think about ingredients — where something came from, how it was handled before reaching my kitchen. With caviar, that matters more: responsible aquaculture gives chefs exceptional farm-raised caviar, with greater sustainability and traceability.

True luxury isn't excess for its own sake — it's an exceptional ingredient, thoughtfully sourced and intentionally prepared, and it still has to taste delicious. It has to make culinary sense, not just signal luxury: richness, acidity, temperature, texture. Sometimes the most sophisticated move is doing less. Small details — the spoon, the bite underneath — turn service into hospitality.

That's why caviar feels at home in Palm Beach right now. People here appreciate beautiful things, but they want to enjoy them, too — a spectacular party doesn't need to feel stiff. A cart rolls up beside the pool, a pie lands on the table, someone holds out a hand for a bump. Luxury can still be exquisite without being overly serious.

Beautiful ingredients and presentation matter, but they're only the beginning. I want guests to taste, see and interact with something — that moment they turn to the person beside them and say, "You have to try this." Long after the flowers are gone and the champagne poured, that's what people remember. And if the caviar rolls right up to them? Even better.
