Salads for Summer!

You don't have to be at the beach to enjoy this light and lively shrimp and arugula bowl

The senses of summer are intoxicating: sunscreen-covered skin, freckle-specked noses, ice cream-covered lips, the warmth of the bright sunshine. Summer is by far my favorite season, especially during this busy stage of life. I love beach days, pool afternoons, cookouts, and all the lazy family time that comes with longer days and the kids out of school. In typical Michelle fashion, I make sure there are opportunities to treat ourselves with the flavors of summer, and always include the vibrant colors of summer fruits and vegetables.

Throughout the summer, there are so many opportunities to grill and gather with friends. The delicious tastes of barbecues don’t have to compromise your health and wellness goals. Plenty of recipes satisfy the senses and stay light and refreshing during our hot July days. I’m a salad girl, and I love to find different ways to spice up a salad to hit all the taste buds. Mixing in textures and sweet and savory complexes can create a salad that's filling as a side or even a full meal. 

One of my favorites is a sweet shrimp salad. This salad is simple and light, and has a sweet and spice flavor combination. For a hearty main dish version, add cooked quinoa for added heartiness.  Enjoy the taste of summer with this delicious salad!

Sweet Summer Shrimp Salad

1 to 2 pounds shrimp
Arugula
Fresh watermelon
Feta cheese
Olive oil
Old Bay seasoning
Lemons
Red peppers
Cooked quinoa (optional)

Thaw shrimp if frozen. Pan sear with olive oil and Old Bay. Place arugula, watermelon chunks, and sliced peppers in a bowl. Top salad with cooked, warm shrimp. Add feta. The warm shrimp will slightly melt the feta and seep through the salad. Squeeze lemon and splash olive oil over the salad. Mix and enjoy!
