When Kang Liang opened KYURAMEN in Eagan in October 2022, he wasn’t just bringing noodles to town—he was bringing a feeling. “We want everyone to enjoy stress-free ramen in a fun, relaxed, and welcoming environment,” says Liang, who owns the Eagan location in Eagan Town Centre.
The idea for KYURAMEN started with a simple love of Japanese ramen. The franchise’s founder traveled to Japan many times to study and taste different regional flavors. His mission? To make high-quality ramen a go-to meal for students, workers, and everyday folks—not just something you only grab on a special night out.
So, what exactly is ramen? It’s a Japanese noodle soup known for its rich broth, springy noodles, and satisfying toppings. At KYURAMEN, each bowl features a carefully crafted soup base—white, thick, fresh, and fragrant—paired with tender pork roast, a perfectly boiled 7-minute egg, and fresh green onions. Delicious!
With over 50 locations across the U.S., and amazing ramen choices for every palate, Liang’s dream is simmering in every steamy, flavor-packed bowl they serve.
A Passion for Japanese Food and Culture
Liang himself shares that same passion. “I love Japanese food and culture,” he says. “I’ve known the franchise owner for years, and when I saw the look and feel of the original restaurant in New York, I knew I wanted to bring that same energy to Minnesota.”
KYURAMEN Eagan offers something for every ramen lover, whether you’re into spicy broth, creamy pork-based soup, or light soy flavors. “We have nine different kinds of ramen,” Liang explains. “Each one has its own flavor profile and toppings, so there’s a lot of variety.”
Among the best sellers? The Kyushu Spicy Tonkotsu Ramen (#6 on the menu) brings the heat without overpowering the rich depth of its pork-based broth. Looking for something Instagram-worthy? Try the Omurice—a soft omelet served over rice that opens to reveal a perfectly runny yolk. “People are surprised we offer something like that at a ramen shop,” Liang says. “It’s definitely different.”
And let’s not forget the appetizers. Liang’s personal favorite is the pan-fried dumplings—crispy, savory, and satisfying. Pair them with a cold brown sugar bubble tea, and you’ve got the kind of meal that turns a regular weeknight into something to look forward to.
More Than the Ramen Bowl
But KYURAMEN is more than what’s in the bowl. Step inside and you’ll notice the decor right away. The space feels clean and modern with touches of Japanese-inspired design throughout. “The booths are a big hit,” Liang notes. “They’re kind of like little cubbies. You feel like you’re in your own little world while you eat. Families, students, and couples all seem to really like the vibe.”
Whether you dine in, grab takeout, or order through the app, KYURAMEN makes your experience easy. That balance of flavor and convenience is what keeps people coming back. And for Liang, it’s about more than running a successful restaurant—it’s about offering something unique to the Eagan community. “We just want people to relax and enjoy good food,” he says.
Bring Your Friends and Appetite
If you haven’t tried it yet, this is your sign. Bring your friends, bring your appetite, and maybe even try something new—because there’s more to ramen than you think, and KYURAMEN is happy to show you the difference.
In the mood for something savory and classic? Go for the Tokyo Tonkotsu Shouyu. Craving bold flavors? Try the Katsuobushi Pork Ramen or the spicy Korean Kimchi Ramen. There’s also the hearty MEGA Ramen, packed with chashu and shrimp, or the Sapporo Miso Ramen, rich with umami. Curry fans will love the Japanese Curry Ramen or Tonkatsu Curry Ramen. And if you prefer lighter fare, the Chicken Ramen and Vegetable Miso Ramen are delicious, comforting options.
To round out your meal, don’t miss the drink menu. KYURAMEN offers creamy milk teas, refreshing fruit teas, thick smoothies, and citrusy lemonades—perfect for sipping between bites or just cooling off on a warm day.
With so many choices, there’s a bowl and a beverage for everyone. Whether you're a ramen first-timer or a seasoned noodle lover, KYURAMEN in Eagan offers something worth coming back for.
