Homemade Bagels

Make Chicago Style, Boiled and Baked, Yeast Bagels at Home

  • Combine 1 cup warm water with 4 ½ teaspoons sugar and 2 teaspoons instant yeast. Let sit for 5 minutes
  • Stir in ¼ cup more warm water, 3 ½ cups bread flour, and 1 ½ teaspoons salt

  • Knead for 7-10 minutes until smooth and stiff

  • Let dough rest in an oiled bowl, covered with plastic wrap, for 1 hour/until doubled

  • Divide into 8 balls, shape by pressing your thumb through the center.

  • Rest on a baking sheet, covered with a damp towel for 10 minutes

  • Preheat oven to 425ºF

  • Boil water with 1 tablespoon honey and 1 teaspoon baking soda. Boil bagels for 1-3 minutes, then place on a baking sheet

  • Bake 20-25 minutes
