Summer is the perfect season to explore bold new flavors, and Lolik Catering’s Spicy Grilled Peach Bellinitakes you beyond the ordinary. Yellow peaches, kissed by flames and caramelized with honey, are layered with a smoky edge. A dash of Tajin adds a playful twist, then it’s topped with Prosecco.
Ingredients:

- 8 ripe yellow peaches
- 1/2 cup honey
- 1 bottle cold Prosecco
- 1 teaspoon Tajin or to taste
Directions:
1. Brush halved peaches with honey; grill or bake at 400 degrees Fahrenheit for 12 to 18 minutes. Remove from heat and cool.
2. Puree roasted peaches, juice drippings, and Tajin in a blender. Pour half into ice molds and freeze. Reserve the rest.
3. Place one spoonful of unfrozen puree at the bottom of a champagne flute. Add a frozen puree cube on top and slowly pour in Prosecco. Gently stir. Enjoy.
