Ingredients:
¼ cup Coconut Sugar
¼ cup Water
1 Jalapeno Pepper (sliced)
3 fl oz White Tequila (2 shots)
1 Lime
½ Navel Orange
½ Sparkling Water
½ Cucumber (sliced)
1 tsp Tajin (Mexican Spice)
½ tsp Coconut Sugar
Directions:
1. To make the simple syrup: In a small saucepan add 1/4 cup of coconut sugar and water and bring to a boil. Reduce to low heat and simmer for 1-2 minutes. Remove from heat and add in 1/2 of the jalapeno slices. Place in fridge. The longer you infuse the simple syrup, the spicier it will become.
2. Fill a shaker with ice. Add in the tequila, 1-2 shots of the jalapeno-infused simple syrup (step 1), the juice of 1/2 a small orange, and the juice of 1 lime. Give it all a good shake.
3. Place the remainder of the coconut sugar (1 tsp) along with the tajin onto a plate and mix them. We the rim of 2 glasses with water or lime juice and dip the rim into the mixture.
4. Fill the glasses with ice and add the tequila mixture (leave some room for the sparkling water).
5. Add the sparkling water, a few slices of jalapeno, and the cucumber slices to the glass and enjoy!
