Protein Packed Peanut Butter Chocolate Rice Krispie Treat Mummies

  • 3 cups brown rice crisp cereal

  • 1/2 cup creamy peanut butter (or nut butter of choice)

  • 1/2 cup coconut sugar, monk fruit or sweetener that measures like sugar

  • 1/4 cup maple syrup, honey, or monk fruit based syrup

  • 90 g collagen peptide powder (optional)

  • 1 tsp vanilla extract

  • ¼ tsp salt

  • 2 oz. dark chocolate chips, stevia sweetened or dairy free optional

  • 1-2 tsp coconut oil as needed

  • Flaky sea salt to garnish, optional

  • Candy eyes

Line an 8x8 pan with parchment. Place brown rice cereal in a large bowl. In a saucepan, melt peanut butter, sweetener, and syrup over medium heat; whisk in collagen (optional), vanilla, and salt until smooth (add 2–3 tbsp milk if needed). Pour over cereal, mix well, and press into the pan. For the topping, melt dark chocolate with 1 tsp coconut oil, stir until smooth, and spread over bars. Chill until firm, then cut into rectangles. Melt white chocolate with a little coconut oil, drizzle to create “mummy” wraps, and add candy eyes before the drizzle sets.

Frankenstein Toast

  • 1 slice whole wheat bread

  • 2 tbsp mashed avocado or guacamole,

  • Seaweed snack sheets

  • Sliced black olives

  • Sliced Cucumber, halved

  • Tomato, sliced

  • Pretzel Stick

Toast bread and spread with mashed avocado or guacamole. Cut seaweed snacks into triangles for “hair.” Break pretzel sticks in half, insert into sides for bolts, and top with olives. Use cucumber, tomato slices, olives, or pretzels to create a face.

Pumpkin Veggie Tray

  • 2 lb baby carrots or carrots peeled and sliced into circles or sticks

  • 1 can black olives

  • 1 piece of celery, cut into 2 inch pieces

  • Optional: dip of choice such as hummus or ranch

On a round platter, arrange carrots in a pumpkin shape. Use black olives for the mouth and nose, and either olives or small bowls of dip for the eyes. Place celery sticks at the top as the stem.

Fruit Monsters, Mummies and Pumpkins

  • Clementines

  • Apples

  • Bananas

  • Applesauce cups or mandarin orange cups

  • Fruit Pouches

  • Sharpie

  • Medical Gauze

  • Googly Eyes

Use a sharpie to draw pumpkin faces on clementines or mandarin cups, or Frankenstein faces on green applesauce cups. Wrap bananas, apples, oranges, or pouches with gauze and add googly eyes to make mummies.
