Crepe Batter:
Ingredients:
- 1 cup all-purpose flour
- 2 eggs
- 1 cup milk
- ½ cup water
- 2 tbsp melted butter
- 1 tbsp sugar
- 1 tsp vanilla extract
- ¼ tsp salt
Instructions:
- Mix ingredients in blender until smooth. Let batter rest for 15–30 minutes.
- Heat a nonstick pan over medium heat. Lightly grease with butter.
- Pour ¼ cup of batter into pan, swirl to coat evenly.
- Cook for 1–2 minutes until edges lift, flip and cook another 30 seconds.
- Repeat with remaining batter.
Strawberry Cream Cheese Filling:
Ingredients:
- 8 oz cream cheese, softened
- ¼ cup powdered sugar
- ½ tsp vanilla extract
- ½ cup diced fresh strawberries
- ¼ cup heavy cream (optional)
Instructions:
- Beat cream cheese, powdered sugar, and vanilla until smooth.
- Fold in diced strawberries. If a creamier texture is desired, mix in heavy cream.
Assembly:
- Spread 2–3 tbsp of filling onto each crepe.
- Roll or fold crepes.
- Top with extra strawberries, whipped cream, or powdered sugar.
