Strawberry Cream-Cheese Crepes

Crepe Batter:

Ingredients:

  • 1 cup all-purpose flour
  • 2 eggs
  • 1 cup milk
  • ½ cup water
  • 2 tbsp melted butter
  • 1 tbsp sugar
  • 1 tsp vanilla extract
  • ¼ tsp salt

Instructions:

  1. Mix ingredients in blender until smooth. Let batter rest for 15–30 minutes.
  2. Heat a nonstick pan over medium heat. Lightly grease with butter.
  3. Pour ¼ cup of batter into pan, swirl to coat evenly.
  4. Cook for 1–2 minutes until edges lift, flip and cook another 30 seconds.
  5. Repeat with remaining batter.

Strawberry Cream Cheese Filling:

Ingredients:

  • 8 oz cream cheese, softened
  • ¼ cup powdered sugar
  • ½ tsp vanilla extract
  • ½ cup diced fresh strawberries
  • ¼ cup heavy cream (optional)

Instructions:

  1. Beat cream cheese, powdered sugar, and vanilla until smooth.
  2. Fold in diced strawberries. If a creamier texture is desired, mix in heavy cream.

Assembly:

  1. Spread 2–3 tbsp of filling onto each crepe.
  2. Roll or fold crepes.
  3. Top with extra strawberries, whipped cream, or powdered sugar.
